Whilst I'm on the topic of vegetables in cake...


Carrots? Beetroots? Parsnips?


As I was thinking about my recent carrot culinary creation, my mind was taken back to a more unusual vegetable-in-a-cake experience which I believe should be noted and promoted!  A few months ago I was at one of my best friends flats in York, and over a classic pot of Earl Grey and chitter-chatter, I think we all got the feeling that a bit of sustenance was in order! My friend's significant other is a fantastic cook and, lo and behold, out came a very pretty looking cake - only a few inches tall, and very light in colour with a tinge of green in.


My first experience of courgette cake.





It was scrumptious - again, so moist and sweet and yet with no courgette intrusion on the palate.  I have been scouring online for a similar sounding and looking dish, and yet sadly the 'courgette loaves' and 'courgette and lemon' cakes readily available do not look and sound quite right. Do not get me wrong, this was a simple cake - just one short and stout layer, but it's delicious texture was just perfect for the occasion and would suit any casual gathering. We are meeting again on Saturday - maybe her arm can be twisted!
